3 Healthier Ways to Decorate Birthday Cakes

I have a two-year-old, and she has a keen nose for sugar…being that I constantly smell of the stuff, that is unavoidable! However, I try to be a tiny little bit creative when decorating cakes for her birthday, using edible decorations that are attractive, interesting taste-wise, but that aren’t full of refined sugar, and I wanted to share my learnings with you.


Dried and dehydrated fruits and flowers are top of my list, and you don’t need an expensive machine to make them. Here are some tips:

  1. Use berries or other exotic fruits to create a number shape

  1. Dip dye and dehydrate some fruit ‘petal’ slices to stick onto buttercream icing.


To achieve this look, very thinly slice fruits of your choice (e.g. strawberries, kiwis, pear, apple) and dip them into a solution of water and food colouring gel/paste (this gives a more intense colour than a liquid food colour, but take care as the dye may stain). Allow to soak for a few minutes, then pat dry with tissue or a clean cloth, and dehydrate either in a purpose built machine (available for around £25 online) or in your oven set to around 50°C  for around 4-8 hrs until dry. Gently press the pieces into or onto buttercream iced cakes for a fun, edible effect. (You can also use natural food dyes if you’re averse to food colouring.)


  1. Use edible flower varieties alongside or in place of dehydrated fruit ‘petals’ to create a colourful looking decoration which is totally edible, perfect for little fingers!

These are often available from farmers markets, or online, or you can grow your own — cornflowers (available in pink, while and blue) and calendula (available in yellow and orange) are pretty easy home-growers in pots or borders.
