Chewy chocolate chip cookies – a little treat during this strange time

We’ve had a full-on week with home learning (as you all have I imagine) and managed to survive (just) the week in the house together. But this morning I felt we all needed a little time out from the work and we did maths through baking by making these delicious cookies. They were out of the oven just in time for a mid-morning brain break.

I think we’ve tried every recipe for chocolate chip cookies but this is our favourite and today I thought I’d share it with you.   I must warn you, they are not the healthiest, but during these times I think we are all in need of a little treat.

  • 150 (5oz) self-raising flour
  • 110g (4oz) butter
  • 75g (3oz) brown sugar
  • 2 tbsp golden syrup
  • 110g (4oz) chocolate chips
  • 2 tbsp milk

  • Preheat the oven to 160 degree C (gas mark 4).
  • In a large bowl, cream the butter and sugar until light and fluffy.
  • Stir in the syrup, flour, chocolate chips and milk and mix well.
  • Place spoonfuls of the mixture on two baking trays and bake for 15-20 minutes.
  • Leave to cook for a couple of minutes, then place cookies on a cooking rack to cool.

P.S. If you’d like to make them into double choc chip cookies, then add 25g (1oz) of cocoa powder and add it to the flour.
